...can someone write a book that is readable for non scientist Christians on explaining our views on evolution/ID/Genesis to non-Christians (NOT another tiresome, should Christians believe in a young earth book) and why evolution does not equal atheism PLEASE Lord Jesus.

I hear there's an IVP book coming later this year that might do that...
And Lewis' essay The Funeral of a Great Myth is helpful if not comprehensive on the subject.

I've not read it, but I've heard that John Lennox's 'God's Undertaker: Has Science Buried God?' (think that's the right title) is very, very good. Although he presumably comes at it from more of a general maths/physics angle than bio-genetics.
Also, there's that dude who heads up the human genome project who's a Christian: don't know if he's written anything (that would be helpful for you, he's most probably written many things in his time).
John Polkinghorne? Or is he to science-y?
Lewis should be your man to write the book if the other ones don't satisfy you .. :) As that is what he studied at uni.. he should have much to say.. i might try to check his essay that dave mentioned here :)
